How to make fun gluten-free sundaes and ice cream sandwiches with Glutino cookies

Double the treats…double the fun! Ice cream is nice on its own, but better with a buddy. A really delicious buddy, that is. If you’re looking to have a spring-themed party with lots of gluten-free treats, check out these super-simple, fun, and incredibly yummy recipes I created when I combined my favorite Glutino snack foods with my favorite ice cream flavors!

Bonus: Prep time for each of these recipes is under 5 minutes. Doesn’t get easier or quicker than that!

Very Vanilla Sundae

What you need:

To make the sundae:

  • Put 2-3 scoops of the vanilla ice cream in a dish
  • Crush the 2 Glutino cookies and sprinkle the pieces over the ice cream
  • Top with a few sprinkles and enjoy!

Salty Chocolate Sundae

What you need:

To make the sundae:

  • Put 2-3 scoops of the chocolate ice cream in a dish
  • Crush the 2 Glutino cookies and sprinkle the pieces over the ice cream
  • Pour the desired amount of chocolate sauce over the ice cream and cookies
  • Crush the Glutino BIG Pretzel(s) and sprinkle the pieces over the sundae

I know you’re probably thinking, “Pretzels and ice cream, WHAT?!?” But seriously, don’t knock it ‘til you’ve tried it. I grew up eating ice cream with pretzels (either crushing up the pretzels and sprinkling them on the ice cream, or using heartier pretzels to scoop up the ice cream—no spoon required). I like using Glutino’s BIG pretzels for this sundae because they’re strong and hold up well, even when your ice cream gets melty and liquidy!

Ice Cream Cookie Sandwiches

What you need:

  • Chocolate or vanilla ice cream (or both!)
  • For each sandwich you want to make, you’ll need 2 Glutino chocolate chip cookies

To make the cookie sandwiches:

  • On the backside of one cookie, spread your favorite ice cream
  • Take another cookie and put its backside on the ice cream, creating a sandwich
  • Enjoy it quickly before it melts!

If eating a whole cookie sandwich is too much of a mouthful, try an open-faced cookie sandwich instead:

  • On the backside of one cookie, spread your favorite ice cream
  • Sprinkle a few sprinkles or a dollop of chocolate sauce on top of the ice cream
  • Eat and enjoy!
